Strawberry Oat Bars
This was the dessert that I made to go with my most recent Sunday Night Dinner of Marinated Mushroom Caps. I have made a few raw date-based ditties in the past, such as Lemon-Ginger-Cashew Balls and Coconut-Date Bars, but I really enjoyed the flavor combination that this recipe offers. The little bit of oatmeal really adds a nice touch and serving topped with fresh fruit takes it up notch.
1 1/2 cups pitted dates
1/4 cup raw macadamia nuts
2 tablespoons old-fashioned rolled oats
Pinch sea salt
1 cup strawberries, hulled and thinly sliced
Step One: Pulse dates, nuts, oats, and salt in a food processor until combined.
Step Two: Press the date mixture into the bottom of a 9-by-5-inch loaf pan.
Step Three: Mash half the strawberries and spread on top of date mixture. Top with remaining strawberries. Slice into rectangles.
