A Vegetarian Cooking Blog

The art of keeping a "scrap cookbook" has been passed down by the women in my family. I learned from both my granny and my mom. A scrap cookbook is essentially a scrapbook for your kitchen. A place to keep favorite recipes, ones you plan to try in the future, and ones given to you by friends and family. It is also a place to stash cooking guides, kitchen tips, recipe adjustments, food gift ideas, etc., and to make notes about food-related happenings, (ie: "Baked these cookies for the holidays and everyone freaked their freak!"). This blog is essentially an electronic version of my scrap cookbook.

I am a just a vegetarian girl who loves to cook and who is often asked to share recipes or provide advice as to good sources for recipes. Since I'm big on the procrastination celebrations, and typically never end up getting recipes to people, I decided to start this blog as exercise in self-discipline and a way to keep all my cooking and kitchen stuff in one place.

My intrigue with all things culinary began in my Granny’s kitchen at a very young age. I fully believe that you learn the most about cooking from others, so I hope that is the case as you peruse my blog.

  • Dark Chocolate Almond ClustersMakes 15
This is an expansion of a basic recipe that was included as a snack option in the 28-Day Challenge that I have been participating in. The original was just almonds and chocolate, but I love chocolate covered dried cherries, so I opted to throw some of those in. Then I thought to myself, “Well, you love coconut just as much, why not add some of that too?” And, ta-da, a delicious, fairly guiltless little sweet treat was born! A note to vegans—be sure to pay attention to the ingredients when shopping for dark chocolate. Some of the lower quality dark chocolates may include a percentage of milk chocolate or milk fat, making them non-vegan.
INGREDIENTS
1 3/4 cups dark chocolate, melted
1 cup whole unsalted almonds
1/4 cup unsweetened shredded coconut + more for topping
1/4 cup dried cherries, chopped
INSTRUCTIONS
Step One: In a medium bowl, combine almonds, cherries, and coconut. Mix to combine.
Step Two: Line a baking sheet with a parchment paper or a nonstick baking mat. Place a teaspoon melted chocolate on baking mat; top with a small handful of almond mixture (about 6 or 7 almonds), making sure to include cherries and coconut. Drizzle almond mixture with 1 tablespoon melted chocolate. Repeat process with remaining almond mixture and chocolate. Sprinkle each cluster with coconut. Transfer to refrigerator and chill until firm.
