Toasted Coconut Muesli
Serves 1I altered the preparation of this lovely muesli combo slightly. I like to allow muesli to soak for a bit (the more traditional preparation calls for soaking oats overnight), so I let them sit in the almond milk for about 30 minutes before adding the remaining ingredients. I also drizzled a tad of agave over the mixture because I used fresh berries which are not very sweet this time of year. The addition would not be necessary with summer berries.
INGREDIENTS
2 tablespoons toasted unsweetened coconut flakes
2 tablespoons gluten-free rolled oats
1/2 apple, sliced
1/4 cup thawed frozen berries
1/4 cup almond milk
INSTRUCTIONS
Step One: In a bowl, combine coconut, oats, apple, berries, and almond milk.
