Avocado-Vanilla Smoothie
Serves 2After making this Avocado-Pear Smoothie last year and falling in love with it, I was happy to find this recipe for a vegan version. This smoothie ditches the yogurt and ups the ante on vanilla. It makes for a super easy, super tasty, nice and filling smoothie.
INGREDIENTS
1 ripe avocado
1 cup no-sugar-added pear nectar, plus more as needed
1/2 teaspoon pure vanilla extract
1 cup ice cubes
INSTRUCTIONS
Step One: Puree ingredients in a blender until smooth. If too thick, add more nectar to adjust consistency.
