Winter Fruit Salad
Serves 4-6In my continued effort to ward off my bastard cold, I made this pretty little monster filled with good for me stuffs. It was nice and easy (with the exception of the little bit of time it takes to de-seed a pomegranate) and definitely gave me a boost. I love Asian pears, they are totally my “winter watermelon” due to their high water content and refreshing, hydrating quality.
INGREDIENTS
3 pink grapefruits, peel and pith removed, cut into segments
1 pomegranate, seeded
2 Asian pears, quartered, cored, cut into thin wedges
1 1/2 tablespoons raw honey
6 to 8 fresh mint leaves (torn into pieces if large)
flaky sea salt
INSTRUCTIONS
Step One: In a medium bowl, toss grapefruit, pomegranate seeds, pears, and honey.
Step Two: Top with mint and salt.
