Morsels from Mom: Artichoke and Spinach Relish...
Artichoke and Spinach Relish with Pecans Makes about 1 1/2 cups
My mom made this little ditty as an appetizer on Christmas Eve. It was quick to prepare and mighty tasty! The original recipe calls for walnuts, but since I am allergic, Mom used pecans instead. Either will be fine.
INGREDIENTS
1/4 cup walnuts
1 13.75-ounce can artichoke hearts, rinsed and chopped
1 cup baby spinach,...

Christmas Eve Feast Revisited: Chunky Bean Dip,...
My family celebrates Christmas on Christmas Eve. This year I opted for a loose Greek theme. Here is a rehash of the dishes that were laid upon our holiday table. In addition to the dishes shown below, I also served a Cucumber and Dill Salad which is a perfect compliment to the combination. The recipe can be found in this previous post. I apologize in advance for the lackluster-ness of most the...

Sunday Night Dinner: Mongolian Tofu and Veggies
Mongolian Tofu and Veggies Serves 3-4
With all the hustle and bustle of Christmas preparations, I am bit tardy on getting this Sunday Night Dinner up, but I did not want to skip it because it was yum. I saw a Mongolian “Beef” recipe recently posted to Tumblr by Finding Vegan and was delighted by the idea of making a Mongolian style sauce at home as it has long been one of my...

I Need Help Going (Pine) Nutty!
Hello dear readers! I need your help! Does anyone out there have a recipe for a pine nut crust that does not involve flour? (I am hoping to use it for a savory dish, not sweet). I can likely invent something based on nut crusts that I have made in the past, but if anyone has an actual recipe or any tips, I would love to get my greedy hands on them! Thank you!!

Sunday Night Dinner: Golden Split Pea Soup and...
Golden Split Pea Soup Serves 6 to 8
I had never made split pea soup and thought it was high time to do so. I opted to browse through some of my cookbooks instead of ignoring them in favor of the Internet like I usually do. I came across this recipe that sounded too interesting to pass up. The recipe calls for puréeing all of the soup, but I opted to purée about half to keep more of a chunky...

Sunday Night Dinner: Mushroom Stroganoff Baked...
Mushroom Stroganoff Baked Potatoes Serves 4 A couple of days ago a random memory of Granny serving beef stroganoff for Sunday night dinner popped into my head. The concept perked my interest—sans beef, of course. After spending some time taking a few peeks at some stroganoff recipes on the Internet, I came up with this mixture and was very pleased with the results. INGREDIENTS 2 large Russet...

Thanksgiving Revisited No. 005: Pumpkin Pie...
Pumpkin Pie Pudding Serves 4
After a failed quest to unearth a recipe for a flourless crust that could withstand the baking duration needed for pumpkin pie, I switched gears and decided to make this pumpkin pie pudding instead. Poppa went nuts for it, which was good since he hadn’t been thrilled with some of the non-traditional Thanksgiving spread. His only complaint was that serving the...

Morsels from Mom: Guacamole and Cheese Chalupas
Guacamole and Cheese Chalupas Makes 24
When I went to my mom’s to celebrate her birthday this past weekend, she whipped up this appetizer that she had planned to bring to Thanksgiving before getting derailed by snow. As we found the idea of deep-frying tortillas unappealing, Mom cheated and used store bought tortilla chips instead. We all really liked the tangy goat cheese with the...

Thanksgiving Revisited No. 004: Granny's Pea Salad
Granny’s Pea Salad Serves 5-6
This simple and easy dish is a family favorite and one that my Granny used to make frequently. She obtained the idea from a salad made in the deli of a local grocery store near my childhood home, and made it her own. I have since incorporated a few additional tweaks. I have tried making a healthier version using plain yogurt, as I am not a big mayo fan, but I...
